Oh! it's simple, it is in the on-line User Manual (accessible from the ? 
menu), section 2.3 Pattern Editor.
I don't know if the mapping can be customized. Maybe you should send a 
note to the Hydrogen authors (http://hydrogen.sourceforge.net/?p=authors).
